After Donna’s beautiful scenic walk through nature, come home and create this quick, healthy, and fulfilling meal for the total euphoric experience.
What you’ll need:
fresh artisan bread
garlic
fresh ripe tomato
poached egg
Parmesan cheese
basil
Slice your fresh bread, place under the broiler to toast. After toasted immediately rub with peeled garlic clove. Now, stick with me and trust me when I tell you to slice a tomato in half and rub the tomato all over the tops of your garlic toast. You will not be disappointed. This process will give the delicious tomato flavor without the watery, soggy effect that you would get from a slice of tomato.
Top with a warm pouched egg. Sprinkle with a good quality, freshly grated Parmesan cheese, and a little sprinkle of ripped fresh basil.
As much as I love my full blown country breakfast, I crave a light meal. Light and healthy doesn’t always mean eating a sprig of lettuce. Indulge in a quality meal full of flavor and you won’t go hungry.

I used to have the WORST time with poaching eggs until I was watching ‘Secrets of a restaurant chef’ on The Food Network. Add two cap fulls of vinegar to the water and place the egg in at the point just before boiling. The egg stays in tact and makes a beautiful poached egg!
You inspired me to make an egg on toast this morning but alas it didn’t even come close to being as gorgeous as the creation above! I am headed to the store for the ingredients and putting this in my breakfast rotation. Way better than cornflakes!
